Strawberry Shortcake for Breakfast

When I was in college, my room mates and I were the typical poor college students. Our cupboards were most often bare.

One Saturday morning my roommate made a breakfast for us that used the ingredients we had in the house. We had Bisquick Mix a bit of fruit, milk, and butter. There was a recipe for shortcake on the side of the box. She made it up for breakfast.

It was so yummy that I have made it for years and years since. I love it and my kids love it. It is a bit, no a lot, like the Old Time bread and milk cereal that my father in-law talks about eating when he was a boy on the farm.

Oh it is so so good! The recipe is really easy too. It used to be on the side of the Bisquick box, but it isn’t there now. So here is the recipe.

Strawberry Shortcake Cereal

  • 1/4c sugar
  • 2 1/3 c Bisquick mix
  • 1/2c milk
  • 3 tbs sugar
  • 3tbs butter, melted
  • Sliced Strawberries and Bananas

Directions

  • Heat oven to 425°F. In large bowl, mix strawberries and 1/4 cup sugar; set aside.
  • In medium bowl, stir Bisquick™ mix, milk, 3 tablespoons sugar and the butter until soft dough forms. Spread into small un- greased cake pan
  • Bake 10 to 12 minutes or until golden brown

Cut a generous sized warm biscuit serving, add fresh strawberries and bananas, sprinkle a bit of sugar and milk. Yum!

I know this recipe sounds a little bit crazy, but I hope you will give it a try. If you don’t have Bisquik, you can just make up a batch of biscuits from any recipe and add a bit of sugar to make them a tad bit SWEETer.

  1. I just had scones and strawberry jam for breakfast, finishing up a batch I made the other day. You don’t get Bisquick here, but my my scone recipe is made with light cream and something like Sprite, so it’s pretty quick too!
