Cake Mix Cinnamon Rolls

Do you love a light and fluffy cinnamon roll? You know, the kind that is raised high, filled with gooey cinnamon filling and frosted with a sweet glaze…. I sure do! I especially love them when the recipe is guaranteed not to fail.

Well, if a cinnamon roll like that is what you want, look no further. I have the PERFECT recipe for you. In fact, it is so good that when my son entered these rolls in the county fair, he won first place!

The secret ingredient is a boxed cake mix. What?! Yep, a cake mix. Any flavor at all. Try a spice mix for a fall roll or how about a lemon or orange mix with a citrus glaze. My favorite is a golden vanilla mix. I bet strawberry would be fun topped with fresh strawberries. The possibilities are all up to you!

Here is the recipe—

  • 1 tsp cinnamon

Frosting

  • 4c powdered sugar
  • 1/2c milk
  • 2tsp vanilla

Directions:

Combine first six ingredients in a mixer using a dough hook until a soft dough forms. Place dough in a warm place and allow to rise until double about one hour. Roll dough into a 1/4-1/2” rectangle. Spread cinnamon filling evenly over rolled dough. Top with nuts if desired. Carefully roll dough from the long side making a long roll. Cut into 1 1/2” slices. Place very closely together in a large greased cake pan. Let rise for another 30min. Bake at 350* for 30-35min or until golden brown. Frost while warm.

  1. These look delicious! I’m confused about the pan size, though. Seems like a 9 x 13 cake pan isn’t big enough for all that delicious-ness…do you use a jelly roll pan? Or something else?
Thanks for help with my question!

  2. They sound delish, but in a two-person household and one of us diabetic, it’s probably a bad idea. Maybe for the next greyhound coffee morning picnic, when I can persuade everyone else to eat them!
